You could do the background blur/focus in CS3 in many different ways, try a few a see what suits your shot/taste the best.

Maybe have a think about fast primes, maybe Limiteds as you can usually gain a stop or two over zooms. Some of the bigger venues you will probably need to run highest ISO and lens wide open.
