Portraits: FA77 or M85 (I used the think the FA77 couldn't be bettered but actually the M85 has a lovely soft fuzzy feel to it that makes for very flattering portraiture. Not the sharpest lens I own by some margin but you don't neccessarily want portraits to be too sharp - something the FA77 can be guilty of).
I pray that digital radio won't put the FM4 out of business any time soon.

and yes I shoot film and have a driveway full of old cars...
But at the same time I also have digital cameras, CD and MP3 players and a couple of DAB radios. No modern cars though - gotta draw the line somewhere

Since boarding the good ship Pentax I have found that I only get those colours when I use Pentax lenses; Sigmas and Tamrons et al simply haven't cut the mustard and have left me with colours that are pretty much indistinguishable from those I'd have got from Canikony cameras. I don't want to say that there's anything wrong with your lens (I'm sure it's very fine) but the coatings that each manufacturer uses in-house have quite a large bearing on how images are rendered, so you probably aren't getting a truly Pentax experience.
I would say that the Carl Zeiss T* coating probably comes closest to the Pentax SMC coating in terms of colour rendition, both being very pleasant on the eye IMHO.

Today I received my Tokina 80-400 and a Sigma 10-20 so I tried those out on the K7. Was too hazy for the Tokina but got a couple of good shots and lots of bad ones with the Sigma which makes me wonder whedther to get a film camera so I shoot a bit less and spend a bit more time thinking about it.

I am slightly surprised that nobody seems to make vinyl "skins" for cameras, like the ones you can buy for MP3 players and similar.
No Pentax listed unfortunately but I bought one for an Olympus Trip and the quality is very good!

I can get an ILford film at 50 ASA? That should be pretty decent looking? Or maybe a bit too slow?
Given your limited range of shutter speeds I'd say an ISO 50 film would be perfect (emulsions were slower in those days anyway so it'll be in keeping), giving you settings of f/16 and 1/50 if it's a bright day and adjust from there if it gets darker. Ilford PANF+ is available in 120 and has a gorgeous fine (effectively invisible) grain.
For focus you want to select a distance of around 5m - at f/16 that will give you everything from around 2m to infinity within the depth of field; perfect for reportage shooting.
Voigtlander Brilliants are tough little things and most seem to have withstood the tests of time pretty well, just remember to wind on straight after each shot or you'll end up forgetting where you got to and shooting double exposures by mistake - I speak from experience of using cameras without an interlock!
