Welcome to this forum.
With older lenses without the "A" setting on the aperture ring you have to use stop down metering. Set the aperture you want on the lens, set the camera to manual mode, compose the scene, press the green button to set the correct exposure, focus the lens then press the shutter button.

From checking what lenses I have used on pictures published in Flickr I found my most commonly used lens was the Sigma 10-20 closely followed by the Tamron 28-75. I was a bit surprised at the sigma being the most used.
