Kind of reminds me of an LX somehow.

My word Daniel they do ooze quality and I am doubly impressed if they are hand stitched. I have to say I'd have thought that stitching is a job ideally suited to pedantic computers rather then creative humans though

However I would like it to be compared with something for comparison, against my sigma 28mm(obviously 42mm on cropped sensor)
If you're looking for a comparison between what you have at the moment (a 28-200 zoom), and a 10mm lens, then you need comparison shots at 10mm and 28mm. Forget about 42mm. It's irrelevant.
By the way, you will see a massive difference. If I had the time, and it wasn't 12.45am, I'd take a couple of shots to show you. Maybe tomorrow...

I don't use Adobe for raw processing, but I'm guesing (well, fairly certain ) that this is an exposure warning, showing you areas that are overexposed (probably in any colour, don't think of it necessarily being pure white). As you reduce the exposure, or adjust the colour temperature, you reduce the amount of overexposure, and therefore the red warning decreases.
If you're getting this in most of your images, you need to adjust your exposure when taking the shot, as you may well be losing detail in the lighter areas.

I think the wooden structure adds a certain stile to the shot.

I tend to use the camera in portrait format for my panoramics, and the resolution you get when stitching is phenomenal compared to a cropped shot. One for instance (using my *istD and about 14 shots) was 18,307x2895 pixels.

I usually use my 50mm lens, or sometimes a zoom set at about 35mm, and use the camera in portrait format purely to get the largest vertical field of view. A couple of examples are here, the type I do often don't need much height to them, so the 50mm is fine.
Just checked one I did in Derbyshire last year with my K10D, and it's 19189 x 3716 pixels. That's over 5 feet long at 300ppi.

They cannot delete any images from your camera, or ask you to do so.
