Your choice of camera and lens package is excellent. Your old lenses will work fine but you all but 10mm at the long end covered by the new lenses.
In 35mm terms, your new lenses will have the equivalent angle of view (AOV) of 27 - 82.5 and 75 - 300mm respectively.

Just shoot raw and do the 'bracketting' during post-processing. You have a +/- 3 stop latitude in just one shot.
PS: Pete, you are only about an hour from where I live. Enjoy Almeria.

There's another mark next to the central one, one stop further round. I assume that's what it's for. So presumably F8 is really F11 at the long end, etc.
EDIT: OK, I found a manual and that second mark is the aperture index for longer lengths so at the 200mm end you should position the f8 indication with this mark, not the centre one.

Good work. A question, did you ensure that ISO (the third variable) remained constant for all tests?
Regarding the 28-200 lens results:- I may be wrong but I think you have to make a minor adjustment to the aperture ring for any particular aperture when moving between extremes of zoom. Reason is that this lens is not constant aperture. I think there are a couple of marks on the aperture barrel somewhere.

A RAW shot taken with some shadows is needed. In your preferred editing software, increase the exposure until the banding effect appears.
As Ben said, if the exposure is right to start with, there is little or no problem.

If you are happy with both your on-screen and printed colours you are only ever likely to make things worse by changing a working environment.
Others here may have a more informed opinion.
Personally, I have never connected any of my cameras to the PC, I don't think I could even find the cables to do so very rapidly.
