were you using a tripod? or monopod or working freehand?
I would suggest that if handholding SR would be advisable
of course I'd forgotten you were birding/panning- sorry, having said that if your target was fairly static then I'd be inclined to have SR on.

but why do you need a computer to adjust anything after the image is on the memory card to me thats computer programing not taking a photo with the end productwhat you have seen on the camera screen

because what the camera sees and then outputs without any manipulation/processing is a load of 0s and 1s....which need rearranging into something slightly more attractive

On a camera there is generally speaking
Spot metering, partial metering, centre weighted, and evaluative (they're the 4 I know best)
With focusing it's a case of choosing how many points and which points you use. You could choose just one point, albeit on any of the Red Arrows in what Mrs S calls the Red Arrow formation of AF points in viewfinder, or you could use a multiplicity of points if your camera is geared up to do so.
You could even focus manually

Different cameras have different pin arrays on the shoe mount(dedication).
Most will accept an unbranded flash but for all singing all dancing it has to be dedicated

The camera needs a little help.
You must remember there are no pure images in photography, either analogue or digital...
Many would say slide film is close, but the temperature of the chemicals or mix of the brew will affect the outcome.
There's nothing wrong with tweaking...it's what the acceptable level is for you
