I guessed it is gravity, and pouring cream and James tilted the camera or rotated the image in PP to make the splash horizontal.

I maybe a torture device for strawberries but it dose show that expensive equipment is not necessary to express your creativity

Garth the camera was tilted and the shot was also tilted in photoshop
cream was poured from above and no devices where used just timing and luck the hard part of the shot was getting the cream to hit the strawberry after each reset if shot.
I'm going to try a lime in a glass next week but the lime hitting the lemonade at a angle from right to left.
In using lemonade I'm hoping for lots of bubbles and a big splash.and on a black back ground
