One lens challenge?

I don't think it is a one lens challenge if zooms are involved

It certainly concentrates the mind compositionally and your legs become the zoom......... for me I'd take the DA 18-135 gives you a little flexibility, if you feel really brave then take the DA 16-45 and some decent walking boots

I pretty much only take one prime if I'm shooting personal work and is either the DA40mm Ltd or the DA 35mm f2.4 or the Q with 01 Prime.

It's not that much of a challenge, but I'd take the 16-45 and put up with the CA. I once owned one and took it to North Wales, it's a wonderful landscape lens in my opinion.
Restricting yourself to a 35mm will do your head in: all those lovely views and no wide angle! (Actually, come to think of it, that might be a genuine challenge...)

Tamron 17-50 2.8 surely?!?!

I often go up to the mountains with only the one lens, 18-135, but as already said, not much of a challenge with that range.
I only have the 8.5mm for the Q and I find it is quite instructive to be limited to one prime. Gives you more time to think about the composition instead of reaching for another lens or adjusting the zoom. Try taking just the 35mm and see how you find it?

From those lenses I'd probably go with the 35mm as well.
Though it really should be the one you're least comfortable with otherwise there's not much of a challenge!

If I do, I have narrowed it down to one of five, DA f2.8 35mm, DA 16-45, DA 18-135, Sigma 10-20 or Tamron 15-50.
Should I, and if so which one?
