One AF-540 or Two AF-360...

Two flashes will give you greater creative flexibility than one, so if you're going to be shooting in controlled situations then I'd say a pair of 360's. If you're just going to be using the flash on camera then I'd reckon the 540's swivel head gives it the advantage. Personally I'd rather have the two 360's but that's down to my style of shooting - others may (and will!) disagree.

two flashes (works out to three if you have the k10 with built in flash) gives way more options.
add a compact lightstand or two, and an umbrella, and a mini ball head, and check out this:

I should have added that I "only" have the *istDL2 at present, so using the inbuilt flash to wirelessly trigger the external flash is not an option. That was really why I was wondering if two AF-360's would give me more flexibility. I would like the swivel option on the 540, but how much I would actually use it I don't know.

Am I the only one to be disappointed by Strobist?
Lots of chat, lots of graphics, but very little actual meat. Having told you to buy a Nikon SB-24 (Pentax equivalent - AF500FTZ), he then warbles away at length without, so far as I can see, providing any useful information at all.
But perhaps there are some hidden gems that I have missed.
And to keep things on-topic, I have a number of different flashguns, and find that by far the most used are a pair of AF500FTZs with an AF240Z on the camera to trigger them. Everything on manual.

I'm certainly not disappointed with the strobist and I think it's an amazing website. For a layman like me, I think there's tons of information there especially if you follow the very thorough lighting 102 course.

Definately two flahses. I have a K10D with a single 360 and I'm in love with the wireless mode. From the manual, it looks like your *ist will not support wireless via the built-in flash. However, it looks like it will support wireless if you use one of the 360s on the hot-shoe.
This opens up a world of possibilities that IMHO more than makes up for the differences between the 360 and 540.

For those who know more about flash photography than I do (and that's most of you) if you had the choice would you buy one AF-540 flashgun or two AF-360 flasguns as the cost from Amazon would be roughly the same.
