I think I actually have a couple of panoramas that I never got round to stitching together.

You're missing the point. This is about getting a larger image from an APS-C sensor, not a larger sensor. When the camera is on a tripod one is supposed to deactivate the shake function so why not use it to capture a larger image based on the method shown in the videos the OP referred to? It can be done now, only it isn't automated but surely could be.Except the main reason the sensor can shift is to allow shake reduction to work - if the sensor were larger in the first place that would man you would need an even larger image circle if you wanted to retain sensor shift shake reduction.
