That number is only relevant for printing, and even then I believe you change that with editing/printer software.
It has nothing to do with resolution of the image in pixels

You can change the dpi without changing the image size (in pixels) in photoshop by going to resize image, and deselecting "resample image" and changing the dpi to whatever. It only really makes a difference to things like the size of the image when you zoom to "print size". Different programs do different things with DPI when you come to print the image.
As far as I know, you cannot change the DPI in camera. Lightroom seems to automatically change the dpi of files I download from the K10D to 240dpi.

The image is measured in ppi (pixels per inch) and the printer prints your image using its inks at a certain dpi (dots per inch)
I know it might seem pedantic, but getting this distinction right will help to avoid confusion when tackling the mysteries of resizing in Photoshop.
