Hi Barrie / Tim,
I was using the kit lens 18-55 and shooting in jpeg. I guess to shoot in raw I would need to be more confident.

I don't have a K-x but I would expect sharper images on my k200 with the 18-55 even if they turned out too dark. Maybe some things to check:
Is the shake reduction turned on.
Are you allowing enough time for the auto focus to lock on (does the K-x show focus confirmation)
Check what AF mode the camera is set on.
Are you using any filters
Are you using the lens wide open (Normally better stopped down a bit)

I'd expect sharper images than this from my K100! 1/30 sec is pretty slow and is asking a lot of the anti-shake system. It must have been remarkably dark in there.
You'll do way better in kinder conditions. Or with a tripod! Have fun with your camera, it looks like a fine piece of equipment.

I have no idea of your level of knowledge so please forgive me if the following is teaching my grandmother to suck eggs!
Generally the higher the ISO the 'worse' the image quality. 1600 ISO is quite high, and although the K-x is great at high ISOs, it is not perfect, and you will notice a slight blurring of the image when viewed at 100%.
Aperture - generally f8 offers a good depth of field for general shots like this, ensuring ,ore of the shot is in focus.
Shutter speed (shooting hand held) - generally the shutter speed should be about the same (or higher) than the focal length of the lens. So 1/20 should be the lower limit when you are shooting wide-angle.
It's hard to tell what's going on when the pictures are posted small on the web. Resizing them always makes them soft, which is why most people apply Unsharp Mask (in Photoshop Elements) to pictures before they upload.

The waterfall shot is too dark but how do I brighten without making it soft, keep crisp. (iso 1600 / shut 1/100 )
The tunnel pic I got brighter by changing the iso but it became soft
