For HDR I would mount the camera firmly on the tripod, set the desired aperture manually and then take up to 7 different exposures -3, -2, -1, 0, +1, +2, +3 stops under and over by altering the shutter speed.
You can do this by using Av and setting the exposures using the Exposure Compansation feature, or in manual mode by setting the speeds manually.
The aperture must remain the same throughout otherwise the depth of field in each shot would vary.

Turning on the extended bracketing is not the issue. When you are in GREEN mode the bracketing features (all of them) are turned off.
I would abandon using the green mode for anything, it is the same as P but with lots of stuff disabled.
For HDR either use manual (as John said) or Av mode and the bracket feature.

I would like to thank all of you for your help. When I get some good HDRI photos I will upload them. I have not tried RAW yet. As soon as I get the HDRI under my belt I will give it a try. I only have my K20D less than a month. Still checking out all the fuctions.

With Extended bracketing the camera record 3 jpgs with differend settings for saturation, sharpness, contrast or white balance. With RAW file those values aren't lock in the file like with Jpg so you can change them without hurting the image quality.

The first tutorial is very good link I started myself with this one
With out turning on the Extended Bracket the upper left side button does not work, as show on page 129 of the manual. With out putting the camera in P mode you can not turn this on.
