My guess would be to get a helicopter flight of some sort! With all the building work going on there, could be the only way to see and appreciate it!
Man made islands:- The Palm & The World
Worlds tallest building in construction.
Worlds largest Shopping centre,
the list just continues to grow, and I would love to see it from the air!

Revise this one. destination is now Abu Dhabi (not Dubai) but what's 80 miles or so between friends?

Was there last May, stayed at the wonderful Rotana Beach:

Also visited the shopping centre:

Even took a lot of pictures inside the mall, no restrictions.
Make sure you visit the Gold Soukh. Closed when I was there.
Have a safe journey.
