Easy way is to put the camera on interval shooting mode.

You really want the FPV real time video signal back to glasses type approach to have lots of control over framing the image, other wise yes, it's a case of flying to a location and holding an angle you think will be what you need for a good shot.

Or if your device is GPS controlled, you can map a flight path in advance, so you get some control over where it will go and where it will hover and shoot from etc. A little less random in that respect.

Expensive models have two operators. One flies the drone, and the other moves the camera and controls the shot.
