Another pointless thread

I know this is heresy but trout and salmon are two of the very few things I cook in the microwave. I season with some ground pepper, lemon juice and fennel, put in a covered container and nuke (1m 30S for two trout fillets, up to 3 minutes for two substantial salmon steaks).

My other method would be light one end of the bbq, put some wood chips on it, put the fish at the other end, put the lid on and hot smoke it.

Actually .........................one of my Michelin recipes for trout and salmon was just as Oggy said - a buttered oval dish, fine shavings of kenyan beans, carrot, fennel and onion, with dry white wine,lemon/lime juice, seasoning - cover with cling film and nuke. The fish loses none of its moisture and the veg garnish stays al dente and bright with just enough jus to serve with it.Fatspider`s version is just an earlier variation which I used for whole salmon instead of the dreaded fish kettle which leeched all the flavour out.

Just don`t ask me to put meat into the microwave !!

Well this thread always did seem to become a food and alcohol thread

I see it's not changing one teeny iota

Once the tribe have gone away I'll have some fun

By the way Tony - I have put meat in my microwave - last one - as I could cook a roast by a combination of Microwave and convection - the machine switched between the 2 and it was beautifully done I have to admit - the present one only uses Convection for it and I've never had the courage to try it . Anyway a roast joint for 2 always struck me as a baby one - and now ?? < sigh > Oh well I'll do some and have one serving hot and then slice it when cold and freeze it in single portions .

Mr Spider - re cooking salmon in the microwave - all you are doing is , in effect, to steam it - with nice stuff included in the package Tony's original recipe when I was to wrap it with the veggies and lemon or lime etc in foil and cooking it quickly in a hot oven is really no different.

I know how it all works TT, my wife always cooks fish in the microwave and I even do it myself with "other" fish, but Salmon always seems nicer done in the oven, which is where it goes when I'm doing it.

Continuing the food thread, we have just enjoyed the Delicious Nigella's (as my husband calls her :roll Marmite Spaghetti.
And it was delicious.
I added mixed mushrooms to the mix and it was just heavenly.

I don't care for her as a person, but some of her recipes are good.
The Marmite spaghetti is surprisingly good. I caught the end of her programme by mistake and saw her make it for the two kids she has hired for the show now her own are too old an sensible to want to take part. It appealed in a weird sort of way and as I said is very tasty.

HG - try a couple of lamb shanks in le Creuset - rub with olive oil and season with sea salt and black pepper, lay on to whole peeled carrots and parsnips, some quartered unpeeled onions, add whole unpeeled garlic cloves, fresh rosemary,a splash of red wine and a splash of water.Lid on and cook low and slow for at least 5 hours.
Remove from pot and rest/remove meat from bones ( it will fall off actually ) - I then rough chop the root veg and use as a base for the lamb to be served on.Squeeze the soft garlic into the juices and strain through a fine sieve with the base of a ladle to extract flavour from the onions and garlic.Adjust with a little red wine to make a rich jus.Serve with a mash potato or a saute potato.

Comfort food for a cold winter`s evening and ideal for dinner partys.

Well - I was out at college tonight - BUT the cooker got it's first use

Don't laugh - pork and onion sausages and oven chips = comfort food on a cold evening .

Very successful - the top oven was great and the gas is really instantly controllable when cooking my sausages [ yes they had to be fried - but ooooh the flavour

Me happy bunny
