Good point.A composition adjustment would move the sensor, which would therefore create a difference between the optical preview and what the sensor actually captured.
I've used composition adjustment to turn the DA12-24 into a slight "shift lens"
Worked really well, but you have to watch out for vignetting on extreme settings. It effectively added maybe 6 to 8 foot of height (as a rough reckoning), and helped to converge verticals.
Definitely a technique to know about... or at least to know how to turn off

I'm not sure if the photographer meant he didn't know about composition adjust, or the menu memory items ....or both ...
But I think composition adjust would be difficult to activate by mistake ....I think you have to menu dive specifically to it.

If you have the composition adjust on when you save a user mode then it will remember it. I routinely have it turned off in camera and adjust in post if necessary - the in-camera function makes saving of the image to the card very slow.
Came late to this thread - the original pic with the turbine blade seems to have more image on the left side than the right side..?

The OP zoomed/shifted and cropped to represent two views of what he saw and what he got. Obviously he can't get a photo showing what he saw in the OVF otherwise there'd be no point to this thread.
