As the title says, I'm just curious as I have no intention of doing it, but is it possible to take a B&W photo on a Pentax digital camera?
I mean at the point of shooting, not post processing.

You can set to B and W filter on my K-30 before you take a photo. Can't see why the K-5 would be any different.

There is a Monochrome digital filter. Have a look at the PU/EPZ reviews and there are shots with all the digital filters for each and every model.

But for it to remain B&W you need to soot in JPEG, when you add a filter to a RAW file it is ignored when you import it and it converts the image back to colour.

Well, I've checked and as far as I can see, you can't. You can have a B&W copy after you have taken the image and you can extract colours, but I can't see how to take a B&W image! I have also checked the manual!

Just set the custom image to monochrome, takes jpeg or raw or both in this , button on right hand side of the OK button( D Button) page 197 manual k-5ii
k-5 IIs, Pentax 60-250, 17-70, 100macro WR, 50mm F2,
AF50 F1.4, Siggy 10-20, Siggy 100-300 F4, ..Pentax Af 160 ring flash

if you mean look into viewfinder and it is in monochrome.. the answer is no then..

I have seen some Black and White images taken with the Leica M9 Monochrome.
It leaves my K5 for dead when I compare my monochrome images.
I saw them at a demonstration from the local Leica agents.
Until I win the Lotto and can afford a M9, I'll take only colour.

then I suggest you learn to do the B&W conversion in post using lightroom or aperture....
you can create incredible shots from your raw files and will never envy Lieca again.
Fired many shots. Didn't kill anything.

And Photoshop.

Learning how to make BW conversions is well worthwhile, whichever software you opt for. Even Photomatix now has BW presets.

The shots you have seen will no doubt have been prepared by very skilled workers. You can do it too with practice.

Yeah, this thing here.

Mono in post gives you choice and freedom never dreamed of in my film days. With practice you learn to visualise the scene ahead of time.

Silver Efex Pro is highly recommended too although it isn't cheap sadly.
