Actually, that is a bit of a convenient cheat.... only the monks' own brewery is inside the Abbey....
however, just the Chimay cheese is made inside the Abbey itself, nowadays.
The big brewery that handles the commercial quantities of lovely beer is outside the abbey walls...
almost a kilometre away, still staffed by monks, but with civilain assistance.
You still are not allowed to visit that though!!
