viewfinder brightness !

Do you mean the back panel LCD brightness?
(There's a setting for that!)
The viewfinder has no brightness controls - it's optical
And the digital display doesn't have a brightness... I often find cupping my left hand over the viewfinder and my eye helps in bright side lighting.

No not the LCD display. As seen through the viewfinder. It sometimes brightens up of it's own accord (bright light perhaps?), so wondered if I'd missed a setting somewhere Do you mean the back panel LCD brightness?

By digital display, do u mean on the top ?? If so that has a button to illuminate, of course.
The left hand trick is what I use, but as a glasses wearer I'm even further from the viewfinder

I believe it has 2 brightness settings which work automatically but you can't control them in anyway.

I believe it use the EV meter and when it's dark it dims the display and when it's bright it brightens it.

Just engage the optical preview!
If the view finder picture is bright then the pupil of your eye will be small letting in a small amount of light.
If the viewfinder picture is dull then the pupil of your eye will be larger letting in a larger amount of light.
When the pupil of your eye is larger then the green display will appear to be brighter.
Engaging the optical preview will stop down the lens, let in less light (unless lens is fully open of course), viewfinder picture becomes darker, your pupil becomes bigger, information display becomes (apparently) brighter!
The limit to this is of course the diameter of the image exiting the viewfinder as of course if your pupil diameter needs to ge bigger then there will be reduced brightness.

It'll make no difference to the brightness of the in-finder information display. If Pentax bring out a FF DSLR??? That will have a brighter viewfinder by default.

What you could do is aim the camera downwards to the ground, but don't know if that's usefull?
Also you can adjust your camera using the top LCD screen.
