Cheers Matt,
I think I'll try
AV F4
Auto Iso 200-1600
-1 ev on flash

If you're indoors, I'd use Manual on the camera, f/5.6 and get an ISO + shutter speed that measures about 1Ev below ambient (i.e. so that the meter shows slightly underexposed).
Then use P-TTL on the flash.
Definitely try it out first! You'll need to be 100% confident before trying it
Oh, and preferably shoot RAW. Then you can always claw back mistakes in Lightroom

After a bit of experimentation I found Manual on camera set at F5.6 and 1/80th sec ISO400 and flash set to -0.5 ev gave best results.
I must admit this flash photography is a bit of a 'black art', more practice needed I think.
You can see the results here Barrow Raiders presentation

I have done a number of events and normally I set the camera to ISO200 or ISO400 and leave the camera in Program. Most of the time it works a treat. Sometimes (the P-TTL being what it is) some shots are underexposed, but the K-5 being what it is, you can pull back the images in RAW without any issue.
Hope this helps.

I'll be using my gripped K5 with a Sigma 24-70mm F2.8 and 360FGZ flash with rogue flashbender to bounce flash.
Can anyone give me some advice on camera/flash settings.
