So the 120-300 2.8 can be converted to Pentax but nit bought in Pentax, bizzarre. I was rather hoping the 100-300 f4 was going to be on there and snap up a cheap canon mount version.

Not sure you could get the 120-300 converted, the Q&A has the following:
Q3: Can I request to convert to any mount of my choice?
A3: Yes, as long as the lens in the requested mount has been released by SIGMA as a product
