What image processing software are you using? Most of them will have an option to this effect in their Export dialog.

I've had software occasionally decide to delete the EXIF data by itself.
Fortunatly one of my (free) image editing packages allows the file to be saved with the EXIF from another image so I could restore it from the unedited original. {EDIT: Just checked it's FlexPhotoDB}
You can probably remove it by saving as a different file type (BMP??)- I'm sure there are many that don't support EXIF.
No doubt there are also packages allowing you to edit the data as if it were a text file, and put in what ever you want...

I don't use PSE myself, but a brief google suggests that the Export for the Web option will allow you to remove EXIF data (or might even do it automatically). PhotoMe (http://www.photome.de/) - which is freeware by the way - would be a good way for you to confirm that the EXIF is actually gone.

Photome is an EXIF editor and a great piece of very useful free software.

Save for web. You don't need to resize it - just use the save for web option. It strips all EXIF from photo.
