catch in focus with M lenses

You need to activate the custom function "using aperture ring" and set it to "permitted" after which you can use the camera in manual mode or Av with stop-down metering.
Catch-in or trap focus is where there is a manual focus lens used and the camera is set to AF. The shutter will only release when the camera thinks it is in focus - that is, when the green hexagon in the viewfinder stabilises.

You will only get pictures taken at max aperture in Av mode, irrespective of where you have turned the aperture ring to. You need M mode to use stop-down metering.
